Cooking with friends

MILKA × SOMMA

On Saturday, 24th of October, we welcome our friend Mirko Febbrile and his team from Somma in Singapore to cook with us for one evening. For one night, Puglia meets the Julian Alps.

David and Mirko met last year at The Best Chef Awards in Milan and quickly found themselves on the same wavelength. They talked about the challenges of the industry, about building a team, and about staying true to your own identity and voice through food. Now we’re bringing that conversation into our dining room, and we’d love you to be part of it.

CHEF-PARTNER, SOMMA

MIRKO FEBBRILE

Mirko is the Chef-Partner of Somma in Singapore, which he opened in 2024 as a modern, deeply personal expression of his native Puglia. Its menus follow the seasons and landscapes of the region he grew up in. Within two years, Somma was named Tatler’s Best New Restaurant, joined the 50 Best Discovery collection and received One Knife at The Best Chef Awards.

Before Somma, Mirko led Braci to a Michelin star at 25, cooked at Noma, and opened Fico, a casual Puglian restaurant awarded a Bib Gourmand. He believes true luxury lies in simplicity and comfort.

PASTRY DIRECTOR, SOMMA

JEANETTE OW

Jeanette left a career in forensic accounting for Le Cordon Bleu in Sydney. She went on to Marina Bay Sands, the opening team of Aura, Jean-Georges Vongerichten’s Dempsey Cookhouse, and led the pastry team at Claudine. In her desserts, taste always comes before appearance. She was named Best Pastry Chef at the Tatler Best Awards in 2026.

ABOUT SOMMA

Somma, Italian for “sum”, is a modern Italian restaurant rooted in the landscapes and traditions of Puglia. It sits in the former library of a school building in Singapore’s New Bahru. Its menu moves through three seasonal chapters, Solterra, Vendemmia and Folklore, each a different reading of Puglia.

“It’s Italian food, just perhaps not as you know it.” Mirko Febbrile

In its first year Somma was named Best New Restaurant by Tatler and Best High-End Restaurant by The Straits Times. International recognition soon followed: a place on Condé Nast Traveler’s 2025 Hot List, One Knife at The Best Chef Awards and, inclusion in the 50 Best Discovery collection.
